I finally attempted to replicate one of your cake recipes at home.

I made the fruit sponge cake that you taught us and it tasted delicious and the presentation turned out well too.

Thanks for all your lessons and leaching me the skills to bake successfully at home.

I would never have known how to do fancier presentations without your class.

I still need to buy myself a turning cake pan and large pastry pallet but at least I now know some technique for improving my presentation skills using the material I have at home.

Hi Reiko !

I love making your Cheesecake Fruité for summer parties ! It’s a perfect sweet ending, light and fruity!

The light rose fragrant of the raspberry confiture and the slight hint of citrus flavour of the cheesecake make a perfect combination.

This recipe has become a staple in my kitchen !

I chose to make the Strawberry Pistachio Eclairs for a New Year’s Eve party.

The colour of the eclairs are so festive and perfect for holiday seasons.

They were a hit and really well received.

  Maria’s Mon Chéri Chocolat Birthday Cake 🎂

 

” I’m making your chocolate cake for my brothers birthday today!

So far so good! 😊

 

The cake was enjoyed by all tonight! I skipped the glaze because I ran out of time.

I think I over whipped the meringue just past the ribbon stage by a few seconds. I now know the difference! My biscuit wasn’t as light as I would have liked.

It tasted great and was so fun to make!

Carmina’s Autumn Pie

 

“After the Halloween we were left with few pumpkins that we had for decoration.

As I don’t like wasting perfectly gòod vegetables, I decided to make a pumpkin pie using the feuilletage rapide recipe I learned from you last year but instead apples I used pumpkin which I grated and cooked just a little with butter, sugar, pate espice and calvados.

I also used the cutting tool I bought after the salmon pie class but, as you can see from the picture I still need some practice for perfect results.

So basically, I combined knowledge from three classes to make a delicious dessert perfect for autumn.

Carmina’s baking scene at home  *Strawberry and Raspberry Mousse Cake*

.

『From the day I took the strawberry mouse cake class I couldn’t wait for an ocasion to make this beautiful and delicious cake.

My friend’s birthday came, and here I am offering to bring the cake.

I made the biscuit a day before, like Reiko advised. Nice lemony aroma filled the house. Next day the rest went without issues and I had the cake ready in no time.

 
Everybody was impressed. even myself :). It was delicious and it disapeared from the plates, people even asking for seconds. Went well with a special champaigne from France that our friend kept for this ocasion.

Can’t wait to learn new ways to spoil my family and friends!

ちょっと前の嵐の勢いで衣替えをすっかり済ませてしまったので慌てて薄手の洋服を引っ張り出しています。。。

『Hi Reiko,

As you know, I’m pretty fond of this Gateau. Easy to make, always turns out right and makes me feel good about myself.

 

This one I made for one of my colleague’s birthday and we had it at work during the coffee break.↓  They loved it and they were very impressed.


So I want to say THANK YOU ☺️ for giving me this!
Oh, and I promise that I will practice my piping technique!

Strawberry Gateau by Amy!

英語のクラスにいつもご参加のエイミーからいちごのショートケーキ製作のご報告を頂きました〜

『Hi Reiko. At the end of our baking class on Strawberry gateau, you told us that if we make this cake 3 times, we will have the knack of it. Here is my first attempt at making this cake!

 

 

Using the piping bag has not been my strength so I decided to practice on this cake. I was pretty happy with the resulting whipping cream flowers. You always teach us such expert technical skills that I would not learn anywhere else.

I have learned such expert and professional techniques from your classes. While these steps are definitely more effort and labor intensive, they make for a beautiful result, both to the tastebuds and to the eye. Delicious and visually delightful. I served this cake to my family for a birthday celebration. They have heard me talk about your classes but in seeing and tasting this cake, they could see how amazing you and your classes are! Thank you Reiko!

『You went so much work Reiko to make those puff pastries ahead of time for us. I feel so honoured and grateful that I get to attend your classes. I come away feeling so proud, accomplished, inspired and invigorated.

Your classes are like therapy: they contribute to my quality of life.

That I am able to somewhat duplicate what you teach us in class is full credit to you as a teacher and your clear, precise ,step by step instructions!

 

The other photo is rows of delicate raspberry sable cookies right out of the oven and ready to eat!

 

The sprinkling of icing sugar gives them a Christmas feel, like they got a dusting of snow . Just like how Reiko taught us!

皆様こんにちは。

いよいよ12月もそこまで近づき、何だかやたら慌ただしい毎日なのは皆様もきっと同じだと思いますが、いかがお過ごしでしょうか。

今日は子供を学校からピックアップしたその足で一家で早〜い夕飯を食べにいき、そのまま私だけ街に残ってクリスマス一色のお店を見て回っているうちにあれもこれも衝動買い。。。いやはや自分の買いっぷりが恐ろしや恐ろしや〜

 

さて、英語でのクラスに毎回ご参加してくださっている方よりお写真を頂きました。メールを頂いた際とってもワクワクが伝わってきたので私もほんとに嬉しかった〜
